Licensed to cut
Johnson’s Gourmet Butchery’s (JGB) Clay Mallison is now a qualified retail butcher after obtaining his certificate recently.

The qualification has been a long time
coming for the newly knifed butcher, who began his
training in 2011 as a school-based apprenticeship. He
worked casually for the best part of the next decade and
has worked at JGB permanently since 2020 to complete
his training.
As a familiar face to the Johnson’s customer, he is
now the third qualified butcher in the local team, joining
Michael Johnson and Lindsay Foster. The JGB team are
proud of Mr Mallison’s efforts to finish his study and
progress to the certificate III qualification. He is also the
ninth apprentice that has completed their training
through JGB.
Mr Mallison said he enjoys working with
the team. The flexible structure of the school-based
apprenticeship combined with the later process of TAFE
visits to JGB, made it easier to complete his training
while working and being at home with his partner and
family.
He said he couldn’t have finished his training without the support of his partner Allira Riley and JGB team. He appreciates the important role of the local butcher and likes that the products they provide to customers are also locally sourced. His favourite cut, like many red meat eaters, is a good t-bone, of which JGB sell many.
Mr Johnson has encouraged his customers to congratulate Mr Mallison on obtaining his ‘licence to cut’ when they are next in the shop.
